These seasonal wine taverns, also known as Straußwirtschaft or Heckenwirtschaft, are a cornerstone of the city's cultural and social scene.

Straußwirtschaften are characterized by their seasonal operation, simple, rustic atmosphere, limited menu, and rich history. Typically open for a few weeks or months each year, they offer a cozy, informal setting, often in a cellar or garden, where visitors can taste local wines straight from the producer. The food served is usually homemade, simple, and locally sourced, with cold cuts, cheese, bread, and regional specialties on offer.

The concept of Straußwirtschaften dates back centuries, with historical roots tracing back to Charlemagne. Vintners were allowed to sell their own wine directly without needing a full restaurant license, a tradition regulated by local laws that often required only a "branch" of greenery (a bush or leafy branch, Strauß) hung outside to signal the tavern was open.

In Mainz, this tradition continues to support local vintners and wine culture. Visitors can enjoy a direct connection with winemakers at various Straußwirtschaften across the city.

One such establishment is the Weingarten in Draisberghof, which offers organic wines, red and white grape juices, and snacks and cold dishes. Visitors are welcome to bring their own food for a picnic. The tavern takes a summer break in July but reopens in August and September, operating on Fridays and Saturdays from 5 pm, weather permitting.

Another popular Straußwirtschaft is the Straußwirtschaft Dhom on the Laubenheimer Height, which serves the Dhom winery's own wine and homemade, partly warm dishes. It is open until the end of August.

The Straußwirtschaft Schilling in Mainz-Kostheim, known for its Spundekaese, Mainzer Teller, and seasonal warm dishes, is expected to reopen on October 9th this year. The Romerhof at the Wann family winery in Wiesbaden offers cold and warm dishes with their own wine, also featuring spargel and fruit from their own harvest. It is open from Wednesday to Sunday.

The Hofausschank at Rebenhof, with its wine bar and guesthouse, is open daily except Thursdays and Sundays, from 5:30 PM to 10:30 PM. Reservations are recommended. The Straußwirtschaft Fasanenhof in Ebersheim has a summer season ending on July 6th, but there may be an autumn season.

Mainz's winemakers also offer their wines and homemade dishes in their own courtyards, under certain restrictions, for a limited time. One such winemaker is Berthold Möhn and his wife Stephanie, who run their winery in Laubenheim for eight generations. Their Gutsausschank opens on Fridays from 10 AM to 12 PM and from 5 PM to 8 PM, Saturdays from 10 AM to 1 PM, and Tuesdays from 5 PM to 8 PM. Reservations are recommended.
