Green onions, also known as scallions or bunching onions, are one of the simplest and most rewarding vegetables to grow at home. These plants don't form large bulbs but produce fresh, flavourful greens in just weeks. Even better, they thrive indoors with minimal space and effort—making them perfect for kitchen gardens.

These hardy plants can be grown from seeds, sets, or even the rooted ends of store-bought bunches. They need warm soil, 6 to 8 hours of bright light, and a light, well-drained potting mix in containers with drainage holes. Overwatering should be avoided, but the soil must stay moist—watering when the top inch feels dry prevents root rot.

Green onions grow quickly, with full-size scallions ready to harvest in around 60 days. Their cut-and-come-again nature means they regrow after trimming, providing a steady supply of fresh greens. For best results, compact, fast-germinating varieties like chives (Schnittlauch) thrive on sunny windowsills in loose, humus-rich soil at temperatures between 18–30°C. To boost growth, organic nitrogen-rich fertiliser encourages leafy shoots. Even kitchen scraps can be reused—rooted ends or cut bases placed in water will sprout new plants within weeks.
