The organization, which was founded by Barb Moore, currently serves over thirty schools and forty sites, providing essential food items to children and families in need.

The journey of Jeffco Eats began modestly, with deliveries made out of cars and rented trucks. Today, the organization's motto, "Para ti, para mi" or "One for me and one for you," resonates as it continues to serve the community. Barb Moore, the founder, is passionate about ensuring no one in her community goes hungry.

Jeffco Eats believes that if everyone pitches in a little, they could end hunger in their community. However, the organization is currently facing a challenge due to a reduction in funding opportunities. They are in need of an additional $50,000 to $100,000 for food, and the food items they need the most are protein and mid-tier instant cheese cups.
