Nestled in the tranquil town of Neversink, New York, Hemlock, the latest project from Foster Supply Hospitality, has opened its doors to guests seeking a rejuvenating escape from urban life.
Inspired by the accidental wellness found in Foster Supply's previous hotels, where guests felt restored in nature, Hemlock aims to provide an immersive experience that encourages a more plant-based diet and promotes overall wellness.
The brainchild of Sims Foster, who boasts a background in New York nightlife and has opened restaurants in every major city in the United States, Hemlock is the first Foster Supply project outside of the Catskills in Sullivan County.
Hemlock offers an all-inclusive package, with all meals, workshops, and fitness classes included in the rate. The retreat caters to a variety of interests, with activities ranging from wandering in the woods and journaling to spa treatments, yoga, cooking classes, goat hikes, and using the crafting studio, movement studio, indoor pool, hot tub, and wet room for clay and paints.
The restaurant at Hemlock, overseen by Executive Chef Charlie Mercein, who was previously on the culinary team at the James Beard Award Twice Nominated DeBruce, serves stellar ingredients, similar to the DeBruce, but with a focus on long-term dietary goals for guests. The menu is mostly plant-based, with occasional animal-based proteins sourced from local farmers.
Guests can choose from 230 acres of private land with a fully developed trail system on site, providing ample opportunities for exploration and relaxation. For solo travellers, Hemlock offers rooms specifically designed for their needs.
